A couple of weeks ago we had the pleasure of joining up with some friends for dinner. Our friends own an emu farm, so we got to see some new emu hatch lings and their horses out in the country. It was the most beautiful day outside. We sat on their porch relaxing and chatting and soaking in the sunshine.
When it was time for dinner, the hostess Mary brought out grilled meat and veggies, salad, bread, and a ceramic dish of rice. The meal was all delicious, but the rice was the star of my meal that night. It was brown rice with plump, little currants and salty specks of sunflower seeds tossed in. Everyone took a bite while their eyes slowly widened. . . this was really GOOD rice. Thinking Mary had put some magical seasoning in it, we all asked what it was. "Oh I just threw in some currants, sunflower seeds, and a little salt," she said nonchalantly, as if the rice was nothing at all. It was a very wonderful meal, with fabulous friends, a delightful new dish to add to my collection, and the perfect way to start my summer. Enjoy.
Mary's Rice
serves about 4
2 cups brown rice (I used short grain, but use any type you enjoy)
4 cups water
1/4 teaspoon salt
1/2 cup dried currants
1/4 cup sunflower seeds
Cook rice according to directions on the package (I used my rice cooker) with the water, salt, and dried currants. Just before serving toss in the sunflower seeds.
