ranger cookies

Happy Father's Day weekend!

It's no surprise that I've always had an interest in sweets. A large part of this comes from growing up around my father. I remember waking up early to eat breakfast with him and read cookbooks, watching cooking shows on PBS like the Frugal Gourmet and Julia Child, going to pick strawberries in the summer and then making jam, and we would bake cookies.

I remember making ranger cookies with my dad. I don't remember exactly what we put in them. . . probably whatever we needed to clear out of the cupboards.

Today I was in the mood for oatmeal cookies, but I wanted something crunchy too. I also wanted Sterling to be able to eat them. I made some impromptu ranger cookies that were non dairy and was fairly pleased with the results. I'm not sure if they live up to my dad's ranger cookies, but I guess I'll find out tomorrow ;)  At least Sterling seemed to enjoy the few he snacked in earlier.

Dairy free ranger cookies 
adapted from jacques torres chocolate chip cookie recipe
makes about 5 dozen 2" cookies

2 cups minus 2 tablespoons cake four
1 2/3 cups bread flour
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons coarse salt
1/2 cup rolled oats
1/2 cup crisp rice cereal
1/4 cup golden raisins
1/4 cup dried currants
8 oz oil ( I used 2oz canola, 2 oz coconut, and 4 oz olive, b/c it was running out and it was what I had on hand) or alternatively 10 oz/ 2.5 sticks butter
1 1/4 cups brown sugar
1 cup plus 2 tablespoons sugar
2 large eggs
2 teaspoons vanilla

Sift flours, baking soda, baking powder, and salt. Stir in oats, cereal, raisins, and currants, and set aside.

Cream together oil and sugars. Add in eggs and stir until light and fluffy. Stir in vanilla.

Mix in the dry ingredients until just combined. Cover and chill in the refrigerator for about 30 minutes or until firm.

Scoop 1 tablespoon of dough and form into balls, place on a cookie sheet and bake at 350°F for about 12 minutes or until golden brown on the edges.
